These are SO delicious.
Ingredients:
1 cup rolled oats
1/2 cup grated carrots
1/4 cup walnuts
1/4 cup unsalted cashews
4 fresh pitted dates or 1 tablespoon of raw honey
1 teaspoon vanilla
1 teaspoon cinnamon
1/8 teaspoon ginger powder
2 whole cloves
1/4 teaspoon orange rind
Dash of himalayan pink salt
shredded coconut for rolling
Directions:
Add dry ingredients in a food processor. Pulse until well combined.
Add remaining ingredients, except the coconut, pulse until mixture forms a ball. Remove mixture, form dough into tablespoon sized balls.
Roll in coconut, refrigerate until chilled. Enjoy.
* If you prefer less clove spice, use 1 whole clove instead. You can also use only the flower part of the whole clove. 1 whole clove is equal to 1/4 tsp of clove powder.
